  • 2 cups strawberries, sliced Select fresh, ripe strawberries for better flavor.
  • 1/4 cup fresh herbs (such as mint or basil), chopped Variety can be adjusted to personal preference.
  • 1/4 cup feta cheese (optional) Can substitute with goat cheese.
  • 1/4 cup nuts (such as walnuts or almonds, optional) Keep nuts separate if storing for crunch.

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the diced cucumbers, sliced strawberries, and chopped fresh herbs.
  • If using, add the feta cheese and nuts.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Drizzle the vinaigrette over the salad and toss gently to combine.
  • Serve chilled or at room temperature.

Notes

Let the salad sit for a few minutes after tossing with the dressing to enhance flavor. Store leftovers in an airtight container and consume within 1-2 days for freshness.
