Ingredients
  

For the cream cheese spread

  • 8 oz Cream cheese Softened for easier mixing
  • 2 tbsp Mayonnaise
  • 1 tbsp Lemon juice
  • 1 tsp Garlic powder
  • 2 tbsp Fresh herbs (such as dill or chives) Chopped

For assembling the sandwiches

  • 1 large Fresh cucumber Thinly sliced
  • 8 slices Hearty bread (sourdough or whole grain)

Instructions
 

Preparation

  • In a bowl, mix together cream cheese, chopped fresh herbs, mayonnaise, lemon juice, and garlic powder until well combined.
  • Spread the mixture on one side of each slice of bread.

Assembly

  • Layer fresh cucumber slices on top of the spread on half of the bread slices.
  • Place the other slice of bread on top, spread side down, to form a sandwich.
  • Cut into quarters and serve immediately.

Notes

Cucumber sandwiches with cream cheese are best enjoyed fresh, but they can be stored in an airtight container in the fridge. Keep the bread separate from the filling to prevent sogginess and consume within a day or two.
