  • 1 cucumber, sliced Use fresh, ripe cucumbers for the best flavor.
  • 1 cup fresh mint leaves Fresh mint enhances the flavor.
  • 1 cup lemon juice Freshly squeezed lemon juice is recommended.
  • 4 cups water Can replace part with club soda for a fizzy version.
  • 2-3 tablespoons honey or agave syrup Adjust sweetness to taste.
  • Ice cubes To serve chilled.

Preparation

  • In a blender, combine cucumber slices, mint leaves, lemon juice, and honey or agave syrup. Blend until smooth.
  • Strain the mixture into a pitcher, pressing to extract as much liquid as possible.
  • Add water and stir well.
  • Serve over ice and garnish with extra mint leaves or cucumber slices if desired.

Notes

You can store this lemonade in the fridge for up to 3 days. Always stir well before serving as the ingredients may settle.
