  • 2 wraps Flour or Spinach Wraps (whole wheat or low-carb variants)
  • 1 cup Cottage Cheese (substitute with ricotta or Greek yogurt)
  • 1 medium Cucumber (slice or julienne)
  • 0.25 cup Red Bell Pepper (finely chopped, optional)
  • 0.25 cup Fresh Dill or Parsley (chopped; swap for basil or cilantro)
  • 1 tablespoon Lemon Juice (or white vinegar; apple cider vinegar works too)
  • 0.5 teaspoon Garlic Powder (or 1 small clove minced, optional)
  • Salt and Pepper (to taste)

Preparation

  • In a medium bowl, combine cottage cheese, chopped dill or parsley, lemon juice, garlic powder (if using), and salt and pepper.
  • Mix thoroughly until well blended.
  • Lay out the wraps on a clean surface and spread a generous layer of the cottage cheese mixture evenly across each wrap.
  • Arrange cucumber slices along the center of each wrap and top with finely chopped red bell pepper or any optional veggies.
  • Starting from the edge closest to you, tightly roll each wrap while folding in the sides to secure the filling inside.
  • Slice each wrap in half diagonally.

Notes

These wraps are best enjoyed fresh, but can be stored in the refrigerator for up to 24 hours. Feel free to add your favorite vegetables or proteins such as cooked chicken, turkey, or avocado.
