Ingredients
  

For the Marinade

  • 1/2 cup orange juice Freshly squeezed is best.
  • 1/4 cup lime juice Freshly squeezed is best.
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Chicken

  • 4 pieces chicken thighs Bone-in and skin-on are recommended for juiciness.
  • 1/4 cup olive oil For searing the chicken.
  • to taste fresh cilantro, for garnish

Instructions
 

Preparation

  • In a bowl, whisk together the orange juice, lime juice, minced garlic, cumin, oregano, salt, and pepper.
  • Add the chicken thighs to the marinade and let them soak for at least 30 minutes, or up to overnight in the refrigerator.

Cooking

  • Preheat the oven to 400°F (200°C).
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Remove the chicken from the marinade and sear both sides until golden brown, about 3-4 minutes per side.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  • Garnish with fresh cilantro before serving.

Notes

For extra flavor, marinate the chicken overnight. Store any leftover chicken thighs in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months.
