  • 2 cups cooked chicken, shredded Can use leftover rotisserie chicken.
  • 1/2 cup ranch dressing Adjust based on taste preference.
  • 1/2 cup dill pickles, chopped

For Assembly

  • 1 cup shredded cheese (cheddar or Mexican blend) Experiment with different cheese blends.
  • 8 small tortillas Whole wheat tortillas can be used for a healthier option.

Preparation

  • In a bowl, mix the shredded chicken and ranch dressing together. Season with salt and pepper.
  • Heat a pan with a bit of oil over medium heat.

Cooking

  • Take a small amount of the cheese and create a lace on the pan, letting it cook until crispy on both sides.
  • In the same pan, warm the tortillas for about 30 seconds each.

Assembly

  • Assemble the tacos by placing a portion of the chicken mixture on the tortilla, add crispy cheese lace, and top with chopped dill pickles.
  • Serve immediately and enjoy your crunchy chicken tacos!

Notes

Serve warm for the best flavor. Use leftovers within 3 days for optimal taste. The crispy cheese lace won't stay crunchy if stored.
