  • 1/2 cup shredded green cabbage
  • 1/2 cup shredded red cabbage
  • 1 cup shelled edamame, cooked
  • 1/2 cup shredded carrots
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup toasted sliced almonds

For the Dressing

  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey (can be substituted with plant-based honey alternative for vegan)
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions
 

Preparation

  • In a large bowl, combine the green cabbage, red cabbage, edamame, carrots, green onions, cilantro, and almonds.
  • In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, ginger, garlic, and red pepper flakes (if using) until well combined.
  • Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  • Let the salad sit for 10 minutes to allow the flavors to meld.
  • Serve chilled and enjoy.

Notes

This salad is best served cold and can be customized with additional vegetables or proteins. Store leftovers in an airtight container in the refrigerator for up to 2 days.
