Ingredients
  

  • 1 cup unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • Grated carrots (approx. 1 cup, 8-10 oz)
  • Cream cheese frosting (recipe below)
  • Chopped pecans (for topping)

Instructions
 

  • Preheat oven to 350°F (175°C)
  • Whisk eggs at medium speed until light and fluffy
  • Add granulated and brown sugars; mix until combined
  • Blend in vanilla extract
  • In a separate bowl, combine flour, cornstarch, baking powder, baking soda, salt, and cinnamon
  • Gradually add dry ingredients to egg mixture in three additions, mixing until just combined
  • Fold in grated carrots (chilled beforehand)
  • Cover dough and refrigerate for 6-8 hours
  • Portion dough into 100g balls
  • Place on baking sheets 3 inches apart
  • Bake for 12-15 minutes until edges are set
  • Cool cookies on sheet for 5 minutes before transferring to wire racks
  • Prepare cream cheese frosting after baking, then pipe onto cooled cookies and top with chopped pecans
