Ingredients

  • 2 pounds chicken breasts Fresh or frozen
  • 1 cup pineapple chunks Canned or fresh
  • 1/2 cup soy sauce Low sodium recommended
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 large bell pepper, sliced Any color
  • 1 large onion, sliced
  • Salt and pepper to taste

Instructions
 

Preparation

  • Place chicken breasts in the crockpot.
  • In a bowl, mix together pineapple chunks, soy sauce, brown sugar, ketchup, garlic, and ginger.
  • Pour the mixture over the chicken in the crockpot.
  • Add the sliced bell pepper and onion on top.

Cooking

  • Cover and cook on low for 4-6 hours, or until chicken is fully cooked.
  • Season with salt and pepper to taste before serving.

Notes

Serve over rice or quinoa for a complete meal. Add vegetables on the side for a healthy option. For extra flavor, marinate chicken in the sauce beforehand.
