Crockpot Creamy Cajun Shrimp Pasta

Ingredients
  

For the shrimp and sauce

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional for heat) Add according to taste
  • 1 bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1/2 cup grated Parmesan cheese For mixing in after cooking
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the pasta

  • 8 oz penne pasta (or any pasta of choice)

Instructions
 

Preparation

  • In a bowl, toss shrimp with olive oil, Cajun seasoning, paprika, garlic powder, cayenne pepper, and a pinch of salt. Set aside.
  • Add bell pepper, onion, garlic, and diced tomatoes to the bottom of the slow cooker.
  • Top with cream cheese and pour in heavy cream. Do not stir.

Cooking

  • Cover and cook on LOW for 3 hours.
  • Stir the sauce gently to combine, then add shrimp to the slow cooker. Cover and cook for another 30 minutes until shrimp are pink and cooked through.
  • While shrimp cooks, boil pasta according to package directions. Drain and set aside.
  • Once shrimp is cooked, stir in Parmesan cheese. Add cooked pasta and toss to coat evenly in the creamy Cajun sauce.

Serving

  • Serve hot, garnished with chopped parsley.

Notes

Make sure the shrimp are cooked just until pink to avoid overcooking. Adjust the spice level by adding more or less cayenne pepper according to your taste. Feel free to add other vegetables like spinach or zucchini for extra nutrition. If you prefer a lighter version, you can use half-and-half instead of heavy cream.
