  • 2 lbs beef stew meat
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, diced
  • 4 cups beef broth Ensure it is gluten-free if needed.
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • to taste Salt and pepper
  • 2 tbsp olive oil

Preparation

  • In a large skillet, heat the olive oil over medium heat. Brown the beef stew meat in batches.
  • Transfer the browned beef to the crockpot.
  • Add the carrots, potatoes, and onion on top of the beef.
  • Pour in the beef broth and season with garlic powder, thyme, salt, and pepper.

Cooking

  • Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender.
  • Stir before serving and enjoy your hearty stew.

Notes

For extra flavor, add a splash of red wine when cooking the beef. Adjust the seasoning to your taste; for spice, include cayenne pepper or red pepper flakes. You can substitute frozen vegetables; add them near the end of cooking. After cooling, store in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months.
