  • 6 slices bacon, diced

Preparation

  • In a skillet, cook the diced bacon until crispy, then remove and set aside.
  • In the same skillet, add the onion and garlic, sautéing until translucent.

Cooking

  • In the Crockpot, add the cooked bacon, sautéed onions, and garlic, chicken broth, and gnocchi.
  • Cover and cook on low for 4 hours or high for 2 hours.
  • About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese.
  • Season with salt and pepper to taste before serving.

Notes

This soup is best served hot. Garnish with extra shredded cheddar cheese or freshly chopped herbs like parsley or chives. Serve along with a slice of crusty bread or a simple salad. For a smokier flavor, try using smoked bacon. Add vegetables like carrots or spinach for extra nutrition. Experiment with different cheeses for a unique taste.
