Ingredients

  • 3.5 lbs beef chuck roast
  • 2 large yellow onions, thinly sliced
  • 2 packets dry onion soup mix
  • 10.5 oz condensed French onion soup (alcohol-free)
  • 1 cup low-sodium beef broth
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • 0.5 teaspoon cracked black pepper
  • 0.25 teaspoon kosher salt

Instructions

  • Pat the beef chuck roast dry with paper towels and season all surfaces with salt and black pepper.
  • Melt the butter in a large skillet over medium-high heat and sear the roast on all sides until a deep brown crust forms.
  • Place the sliced yellow onions in an even layer at the bottom of the slow cooker crock.
  • Transfer the seared beef roast into the slow cooker, resting it on top of the onions.
  • Whisk together the beef broth, condensed French onion soup, dry onion soup mix, minced garlic, and thyme in a separate bowl.
  • Pour the liquid mixture over the beef in the slow cooker.
  • Cover and cook on the Low setting for 8 to 10 hours until the roast is fork-tender.

Notes

Ensure your canned onion soup and dry soup mixes do not contain any wine or sherry components. Serve with mashed potatoes or crusty bread to soak up the rich onion gravy. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
