Ingredients
  

Main Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions
 

Preparation

  • Boil the sweet potatoes in a pot until tender, about 10-15 minutes. Drain and mash in a large bowl.
  • Cook the red lentils in water until soft, about 15 minutes. Drain and add to the mashed sweet potatoes.
  • Stir in the chopped onion, garlic, cumin, coriander, salt, and pepper. Mix until well combined.
  • Form the mixture into patties.

Cooking

  • Heat olive oil in a skillet over medium heat. Cook each patty for 3-4 minutes on each side until golden brown and crispy.

Serving

  • Serve patties warm with creamy avocado cilantro sauce made by blending avocado, cilantro, lime juice, and salt until smooth.

Notes

Store any leftover patties in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat. For better texture, ensure sweet potatoes are fully cooked and add flour if too wet. Customize with spices or herbs like parsley or dill for different flavors.
