  • 2 tsp baking powder
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying (enough to cover the bottom of the skillet)

Preparation

  • Gather and prepare all ingredients by chopping jalapeños and measuring corn and cheeses.
  • In a large bowl, whisk together flour, baking powder, salt, and pepper until well combined.
  • In another bowl, mix cream cheese with eggs until smooth. Gently fold in corn and jalapeños.
  • Gradually add the dry mixture to the wet mixture using a spatula without overmixing.

Cooking

  • Heat oil in a skillet over medium heat until it reaches 350°F (175°C).
  • Scoop batter into the hot oil and fry for about 3-4 minutes on each side until golden brown.
  • Remove from oil and drain on paper towels before serving.

Notes

Serve these fritters warm, with dipping sauces like ranch or sour cream. You can add fresh cilantro or a squeeze of lime for a zesty kick. To store leftover fritters, let them cool completely and place them in an airtight container. Keep them in the refrigerator for up to 2 days. Reheat in the oven or air fryer for optimal crispiness.
