  • 1 teaspoon salt To taste.
  • 1 cup water Adjust as needed to achieve the right batter consistency.
  • Oil for frying Vegetable or canola oil recommended.

Instructions
 

Preparing the Batter

  • In a large bowl, combine cornmeal, flour, chopped onion, celery, garlic, Cajun seasoning, and salt.
  • Gradually add water to the mixture until a thick batter forms.

Frying

  • Heat oil in a deep skillet or fryer to 350°F (175°C).
  • Drop spoonfuls of the batter into the hot oil, frying in batches until golden brown (about 3-4 minutes).
  • Remove from oil and drain on paper towels.

Serving

  • Serve warm as a side dish.

Notes

For extra crunch, add a bit of cornmeal to the outside of the batter before frying. Ensure the oil is hot enough and don’t overcrowd the pan while frying.
