  • 1 tablespoon olive oil For drizzling over chicken.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a food processor, combine dill pickle chips, Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper. Pulse until finely chopped.
  • In a bowl, beat the egg.
  • Dip each chicken breast into the egg, then coat with the dill pickle mixture, pressing to adhere.
  • Place coated chicken on a baking sheet lined with parchment paper. Drizzle with olive oil.

Cooking

  • Bake for 25-30 minutes or until chicken is cooked through and golden brown.
  • Serve hot with sides like coleslaw, mashed potatoes, or a fresh salad.

Notes

For best results, press the dill pickle mixture onto the chicken well. You can prepare the chicken ahead of time and refrigerate it until ready to bake. Store leftovers in an airtight container for 3-4 days.
