  • 2 pieces chicken breasts Boneless and skinless
  • 1 cup breadcrumbs Panko breadcrumbs recommended for extra crunch
  • 1 piece egg Beaten
  • 1 tablespoon olive oil For drizzling
  • 2 pieces ciabatta rolls Sliced
  • 2 cups romaine lettuce Chopped
  • 1/4 cup Caesar dressing For mixing with lettuce
  • Parmesan cheese Grated, for topping
  • Salt and pepper To taste

Preparation

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper.
  • Dip the chicken into the egg and then coat it with breadcrumbs.
  • Place the chicken on a baking sheet and drizzle with olive oil.

Cooking

  • Bake for 20-25 minutes until golden and cooked through.

Assembly

  • While the chicken is baking, mix the chopped romaine with Caesar dressing.
  • Slice the ciabatta rolls and toast them lightly if desired.
  • Once the chicken is done, slice it and assemble the sandwich by placing the chicken on the ciabatta rolls, adding the dressed lettuce and a sprinkle of Parmesan cheese.
  • Serve immediately.

Notes

For extra flavor, marinate the chicken in Caesar dressing for a few hours before cooking. You can add tomatoes or avocado for a different flavor profile. Leftovers can be stored in the refrigerator for up to 1 day.
