Ingredients
  

Fritter Mixture

  • 2 cups mashed potatoes Smooth and lump-free for better mixing.
  • 1 cup corn kernels Fresh or thawed if frozen.
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup all-purpose flour Use more if the mixture is too wet.
  • 2 large eggs, beaten
  • 2 tablespoons green onions, finely chopped
  • 1/2 teaspoon smoked paprika
  • to taste salt and pepper Adjust seasoning according to taste.

Preparation

  • In a large bowl, combine mashed potatoes, corn kernels, cheddar cheese, flour, beaten eggs, green onions, smoked paprika, salt, and pepper. Mix until well combined.

Cooking

  • Heat about 1/4 inch of vegetable oil in a skillet over medium heat.
  • Scoop approximately 2 tablespoons of the mixture, form into a patty, and carefully place it into the hot oil.
  • Flatten slightly with a spatula and cook for 2-3 minutes on each side, or until golden brown and crispy.
  • Transfer fritters to a plate lined with paper towels to drain excess oil.
  • Repeat with the remaining mixture, adding more oil to the skillet as needed.

Notes

Serve warm as a delightful snack or side dish. Excellent with sour cream, fresh herbs, or hot sauce. To store leftovers, let them cool completely and refrigerate in an airtight container for up to 3 days, or freeze separated with parchment paper.
