Ingredients
  

For the Filling

  • 2 cups shredded cooked chicken Can use shredded rotisserie chicken for convenience.
  • 1 tsp chili powder Adjust for desired spiciness.
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ¼ tsp salt Adjust to taste.

For the Taquitos

  • 16 small corn tortillas Warm them to prevent cracking.
  • 1 can cooking spray For browning and crispiness.

Preparation

  • Preheat your oven to 425°F (220°C). Line a baking sheet with a cooling rack or parchment paper.
  • In a large bowl, combine shredded cooked chicken with chili powder, garlic powder, onion powder, cumin, and salt. Stir thoroughly.
  • Heat a non-stick skillet over medium heat. Warm each tortilla for 30 to 45 seconds on each side, then place them in a zip-close bag to keep soft.

Assembling and Baking

  • Lay each tortilla flat and spoon about 2 tablespoons of the seasoned chicken mixture along one edge. Roll tightly and place seam-side down on the prepared baking sheet.
  • Lightly spray all sides of the rolled taquitos with cooking spray.
  • Bake in the preheated oven for 18 minutes. Flip each taquito and bake for an additional 5 minutes until crispy and browned.

Serving

  • Serve hot with dips like guacamole, salsa, or sour cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by baking at 350°F (175°C) until warmed through.
