Ingredients
  

For the Cauliflower Bites

  • 1 head cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder

For the Garlic Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a bowl, toss the cauliflower florets with olive oil, garlic powder, salt, and pepper.
  • Spread the cauliflower on a baking sheet in a single layer.

Cooking

  • Roast for about 25-30 minutes, or until golden and crispy.
  • In a separate bowl, mix together the mayonnaise, lemon juice, minced garlic, and paprika to make the garlic sauce.

Serving

  • Serve the crispy cauliflower bites warm, drizzled or dipped in the garlic sauce.

Notes

Cut the cauliflower into even-sized florets for uniform cooking. Don’t crowd the baking sheet to ensure they crisp up. You can add other spices like cumin or chili powder for an extra kick. For storage, keep leftovers in an airtight container in the fridge for 3-4 days.
