  • 4 large large eggs
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup sugar for the egg mixture
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 8 slices brioche bread preferably day-old
  • 1/4 cup sugar for topping for caramelizing
  • to taste Butter for greasing

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  • In a bowl, whisk together eggs, heavy cream, milk, sugar, vanilla extract, and cinnamon until well combined.
  • Arrange the brioche slices in the baking dish and pour the egg mixture over them, making sure they are well soaked.
  • Cover and refrigerate for at least 30 minutes or overnight.

Baking

  • Bake in the preheated oven for 30-35 minutes until golden and set.
  • Once baked, sprinkle sugar on top and use a kitchen torch to caramelize the sugar until golden brown.

Notes

Serve warm with fresh fruit like strawberries or blueberries and a drizzle of maple syrup. Optionally sprinkle with powdered sugar. Leftovers can be stored in an airtight container for up to 3 days. For best results, use day-old brioche bread and adjust cinnamon or vanilla to taste. You may also add nuts or chocolate chips for extra flavor.
