Ingredients

Vegetables

  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 2 cups sliced carrots

Sauce

  • 2 tablespoons olive oil
  • 1 cup shredded cheese (e.g., cheddar or your choice)
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • Salt and pepper to taste

Topping

  • Breadcrumbs optional, for topping

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • Lightly steam the cauliflower, broccoli, and carrots until just tender, about 5-7 minutes.

Sauce

  • In a saucepan, melt the butter over medium heat. Stir in the flour to create a roux, then gradually whisk in the milk. Cook until it thickens slightly.
  • Remove from heat and stir in the shredded cheese until melted and smooth. Season with salt and pepper.

Assembly and Baking

  • In a baking dish, combine the steamed vegetables with the cheese sauce. Mix until evenly coated.
  • If desired, sprinkle breadcrumbs on top for a crispy texture.
  • Bake for 25-30 minutes, or until golden and bubbling.

Serving

  • Serve warm and enjoy your cozy meal!

Notes

Feel free to use any combination of vegetables you like. For added flavor, try mixing in some herbs like thyme or rosemary. For a healthier version, you can replace the cheese with a vegan cheese alternative or omit it entirely. You can also swap the milk for a plant-based milk.
