Pasta and Sauce Ingredients

  • 8 oz Pasta (Any type like spaghetti or penne)
  • 8 oz Mushrooms (Fresh varieties such as cremini or shiitake)
  • 2 tbsp Olive Oil (Can substitute with butter)
  • 2-3 cloves Garlic (Freshly minced)
  • 2 cups Fresh Spinach (Can substitute with kale)
  • 1 cup Heavy Cream (Substitute with half-and-half or coconut milk for less calories)
  • 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the mushrooms to the skillet and cook until they’re golden brown, about 5-7 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the fresh spinach to the skillet and cook until wilted.
  • Pour in the heavy cream and bring it to a simmer.
  • Stir in the cooked pasta and Parmesan cheese. Mix well.
  • Season with salt and pepper to taste.

Notes

Serve the pasta in warm bowls or plates. You can sprinkle extra Parmesan cheese on top for added flavor. A side salad or some garlic bread pairs well with this dish for a complete meal. To store leftovers, let the pasta cool completely, then transfer it to an airtight container. You can keep it in the refrigerator for up to 3 days. To reheat, simply warm it in a skillet over low heat or microwave it until heated through.
