Ingredients
  

Pasta and Protein

  • 1 package tortellini (store-bought or homemade)
  • 4 slices bacon or pancetta, chopped

Sauce

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Use freshly grated for extra flavor.
  • 2 large eggs
  • 2 cloves garlic, minced

Seasoning and Garnish

  • for garnish Chopped parsley

Preparation

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large skillet, cook the chopped bacon or pancetta over medium heat until crisp.
  • Add minced garlic and sauté for 1 minute.
  • In a bowl, whisk together the heavy cream, eggs, and Parmesan cheese.

Combining

  • Reduce heat to low and add the cooked tortellini to the skillet with bacon.
  • Pour the cream mixture over the pasta, stirring quickly to coat.
  • Season with salt and pepper to taste.

Serving

  • Serve immediately, garnished with chopped parsley.

Notes

If you have leftovers, store in an airtight container in the refrigerator for 2-3 days. Reheat gently, adding a splash of cream or milk if needed. For extra flavor, use freshly grated Parmesan and stir quickly to avoid scrambling the eggs. Consider adding peas or spinach for a twist, or red pepper flakes for a spicy kick.
