  • 4 pieces boneless, skinless chicken breasts Use fresh or frozen.
  • 1 can diced tomatoes (14 oz)
  • 1 cup heavy cream Can be substituted with half-and-half or coconut milk.
  • 1/2 cup fresh basil, chopped Fresh basil is recommended for best flavor.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • splash tablespoon olive oil Used to sauté the garlic.

Preparation

  • In a slow cooker, add the diced tomatoes, garlic, and a splash of olive oil.
  • Place the chicken breasts on top and season them with salt and pepper.
  • Pour the heavy cream over the chicken breasts.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or until the chicken is fully cooked.
  • Once cooked, stir in the fresh basil before serving.

Notes

To store leftovers, let the chicken cool completely, place it in an airtight container, and keep it in the fridge for up to 3 days. Can be frozen for 2-3 months. For more flavor, consider adding Italian seasoning or red pepper flakes.
