  • 1 lb steak, cut into cubes You can use sirloin or chuck, depending on preference.
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth Can substitute with vegetable broth for a vegetarian option.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Cooking

  • In a large pot, heat olive oil over medium heat. Add the cubed steak and brown on all sides.
  • Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  • Add the diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  • Stir in the heavy cream and season with salt and pepper.
  • Cook for an additional 5 minutes, then remove from heat.
  • Serve hot, garnished with fresh parsley.

Notes

If you have leftovers, let the soup cool down, then transfer it to an airtight container. Store it in the refrigerator for up to 3 days. You can also freeze it for longer storage, good for about 2 to 3 months.
