Ingredients

  • 2 cups fresh spinach leaves (blanched and pureed)
  • 2 cups whole milk
  • 2 tablespoons wheat flour
  • 1 cup shredded mozzarella
  • 8 oz pappardelle or fettuccine pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • Salt and pepper to taste

Instructions

  • Wash spinach thoroughly and blanch in boiling water for 2-3 minutes, then blend into a smooth puree.
  • Heat olive oil in a large deep skillet over medium heat and sauté the onion and garlic until translucent.
  • Stir in the wheat flour and cook for one minute to form a light roux.
  • Gradually whisk in the whole milk and simmer until the sauce thickens.
  • Add the spinach puree and shredded mozzarella to the sauce, stirring until melted and smooth.
  • Season with salt and pepper.
  • Add the cooked pasta directly into the skillet with a splash of reserved pasta water.
  • Toss well until the pasta is glossy and coated in the creamy sauce.

Notes

Reserve a small amount of starchy pasta water to thin the sauce if it becomes too thick.
Substitute whole milk with oat or almond milk for a dairy-free or different flavor profile.
Use gluten-free flour if preferred.
