Ingredients
  

For the Toast

  • 2 slices Sourdough bread Can substitute with other types of bread.

For the Ricotta Mixture

  • 1 cup Ricotta cheese Use fresh ricotta for best results.
  • 1 clove Garlic Optionally include for extra flavor.
  • 1 tbsp Olive oil Plus additional for drizzling.
  • to taste Salt
  • to taste Black pepper Fresh cracked is recommended.

For the Topping

  • 2 medium Tomatoes Use ripe tomatoes for best flavor.

Instructions
 

Preparation

  • Toast sourdough bread until crisp on the outside but tender inside, using a toaster, grill, or skillet.
  • In a bowl, mix ricotta cheese with salt, pepper, and a drizzle of olive oil until smooth.
  • Slice tomatoes into thick rounds.

Assembly

  • Spread seasoned ricotta over the toasted bread.
  • Top with tomato slices and drizzle with olive oil.
  • Finish with fresh cracked pepper and optional herbs or chili flakes.
  • Serve immediately.

Notes

Best served warm immediately after preparation. If you have leftovers, store the ricotta mixture in an airtight container in the fridge for up to 2 days. Toast fresh sourdough and top it with the stored mixture and fresh toppings when ready to eat.
