Ingredients
  

For the Polenta

  • 1 cup polenta
  • 4 cups water or vegetable broth Use vegetable broth for added flavor.
  • 2 tablespoons butter Can substitute with olive oil for a dairy-free option.
  • 1/2 cup grated Parmesan cheese Substitute with other hard cheese or nutritional yeast for a dairy-free option.
  • Salt and pepper to taste

For the Poached Eggs

  • 4 eggs Fresh eggs work best for poaching.

For Garnish

  • Fresh herbs (like chives or parsley) Optional, for added flavor and decoration.

Preparation

  • Bring water or vegetable broth to a boil in a pot.
  • Gradually whisk in the polenta, stirring continuously to prevent lumps.
  • Reduce heat to low and cook for about 20-25 minutes until thick, stirring frequently.
  • Stir in butter and Parmesan cheese, and season with salt and pepper.

Cooking Eggs

  • In a separate pot, bring water to a simmer and poach the eggs for about 4 minutes.

Serving

  • Serve the creamy polenta in bowls, topped with poached eggs and garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat with a little water or broth. Poached eggs are best eaten fresh.
