  • 2 tablespoons olive oil

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the elbow macaroni and mixed vegetables to the pot.
  • Pour in the vegetable broth and stir well.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the pasta is cooked and the liquid is mostly absorbed.
  • Stir in the shredded cheese until melted. Add salt and pepper to taste.
  • Remove from heat and let it sit for a few minutes to thicken.

Notes
