  • 200 grams Udon Noodles Cook according to package instructions.
  • 2 tablespoons Miso Paste Use white for milder flavor, red for stronger.
  • 2 tablespoons Soy Sauce Low-sodium if preferred.
  • 1 tablespoon Sesame Oil Can substitute with vegetable oil.
  • 1 cup Vegetables (e.g., bok choy, carrots) Seasonal veggies can be substituted.
  • 2 pieces Green Onions Chives can be used as an alternative.

Preparation

  • Start by cooking the udon noodles as per the instructions on the package.
  • While the noodles are cooking, prepare your vegetables. Chop them into bite-sized pieces.

Cooking

  • In a large pan, heat the sesame oil over medium heat.
  • Add the chopped vegetables and sauté for a few minutes until they are tender.
  • Once the vegetables are ready, reduce the heat and stir in the miso paste and soy sauce. Mix well until the miso paste is completely dissolved.
  • Drain the cooked udon noodles and add them to the pan. Toss everything together to coat the noodles and vegetables in the creamy miso sauce.
  • Cook for another minute or two until everything is heated through.

Serving

  • Serve your creamy miso udon in a bowl, and garnish with chopped green onions on top.
  • You can enjoy this dish hot, and it is perfect for a quick lunch or dinner.

Notes

If you have any leftovers, store them in an airtight container in the refrigerator for 2-3 days. Reheat by adding a splash of water in a pan and warming it up over low heat. Adjust the amount of miso paste to suit your taste. Feel free to add protein like tofu, chicken, or shrimp for extra nutrition. Experiment with different vegetables based on what you have on hand or what’s in season. For a spicy kick, add chili paste or fresh chili slices while cooking vegetables. To make it vegan, use tofu instead of meat and ensure your soy sauce is vegan-friendly.
