Ingredients
  

Cheese Base

  • 1 cup feta cheese (crumbled) Use good-quality feta for the best flavor.
  • 0.5 cup cream cheese (softened)

Olives & Seasoning

  • 1 cup green olives (drained and chopped) You can substitute with black olives if preferred.
  • 1 clove garlic (minced)
  • 2 tbsp olive oil (extra-virgin)
  • 1 tbsp lemon juice (fresh)
  • 0.5 lemon zest
  • 1 tbsp parsley (chopped)
  • 0.5 tsp black pepper
  • to taste Salt

Instructions
 

Preparation

  • In a food processor, combine the feta, cream cheese, olive oil, lemon juice, lemon zest, and minced garlic.
  • Pulse the mixture until it is creamy but retains a slight texture.
  • Add most of the chopped green olives and pulse briefly to blend them in.
  • Transfer the mixture to a bowl.
  • Fold in the chopped parsley and black pepper. Taste and add salt if needed.
  • Chill the spread for 30 minutes before serving to enhance the flavor.

Notes

Store any leftover spread in an airtight container in the refrigerator for up to a week. Stir before serving as it may firm up.
