  • 1 cup mushrooms, sliced Use a mix of mushrooms for richer flavor.
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can substitute with half-and-half or plant-based cream for a lighter version.
  • 2 tablespoons olive oil
  • to taste Salt

Instructions
 

Cooking the Chicken

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken thighs with salt and pepper, then add them to the skillet, cooking until browned on both sides, about 5-7 minutes each side.
  • Remove chicken and set aside.

Making the Sauce

  • In the same skillet, add garlic and mushrooms. Sauté until mushrooms are soft, about 3-4 minutes.
  • Pour in the heavy cream, stirring to combine, then bring to a simmer.
  • Return the chicken thighs to the skillet, cover, and cook for an additional 10-12 minutes, or until the chicken is cooked through.
  • Garnish with fresh parsley before serving.

Notes

This dish pairs well with rice, mashed potatoes, or pasta. To store leftovers, let the chicken cool down, then transfer to an airtight container and refrigerate for 3-4 days or freeze for up to 2 months.
