Ingredients
  

  • 2 large boneless skinless chicken breasts, sliced lengthwise and pounded to 1/2 inch
  • Salt and pepper, to taste
  • 3 teaspoons Italian seasonings (oregano and basil mix)
  • 1/3 cup all-purpose flour (or gluten-free alternative)
  • 4 tablespoons shredded Parmesan cheese (or Pecorino)
  • 3 tablespoons olive oil (neutral oil for higher smoke point)
  • 2 1/2 cups low-sodium chicken broth
  • 1 beef bouillon cube (or 1 tsp vegetarian bouillon)
  • 1 teaspoon low sodium soy sauce (or Worcestershire alternative)
  • 1 teaspoon onion powder (or 1 tbsp fresh minced onion)
  • 1/2 teaspoon dried thyme (or fresh thyme leaves)
  • 1/2 teaspoon mustard powder
  • 4 large Russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1 cup whole milk or heavy cream
  • Salt to taste for mashed potatoes

Instructions
 

  • Pound chicken breasts to 1/2-inch thickness. Season both sides with salt, pepper, and Italian seasonings.
  • In a shallow dish, mix flour with 2 tablespoons Parmesan and a pinch of salt.
  • Dredge chicken in flour mixture, shaking off excess. Heat 1 tablespoon olive oil in a skillet over medium-high. Cook chicken 3-4 minutes per side until golden-brown. Remove and set aside.
  • In the same skillet, sauté garlic cloves (optional) until fragrant. Deglaze with chicken broth, scraping fond bits from the pan. Stir in bouillon, soy sauce, onion powder, thyme, mustard powder, and remaining 1 tsp Parmesan. Simmer gravy until thickened, 5-7 minutes.
  • To make mashed potatoes: Boil potatoes in salted water until tender. Drain, then mash with butter and milk/cream until smooth. Season with salt.
  • Serve chicken topped with gravy over mashed potatoes.

Notes

Use Pecorino instead of Parmesan for a sharper flavor
Add 1 tbsp fresh minced garlic during sauce preparation
Mashed potatoes can be prepared ahead and reheated
Store leftover sauce separately for up to 3 days
