  • 1 cup rolled oats Use old-fashioned rolled oats for the best texture.
  • 2 cups coconut milk Almond or soy milk can be used as a substitute.
  • 1 tablespoon maple syrup or honey Adjust sweetness to taste.
  • 1/4 teaspoon salt

Toppings

  • 1/2 cup fresh berries (strawberries, blueberries, or raspberries) Experiment with different types of berries.
  • to taste other toppings (nuts, seeds, additional maple syrup) Use your favorite toppings for added flavor.

Preparation

  • In a medium saucepan, combine the rolled oats, coconut milk, maple syrup, and salt.
  • Bring to a boil over medium heat, then reduce heat to low and simmer for about 5-10 minutes, stirring occasionally, until the oatmeal is creamy and the desired consistency is reached.

Serving

  • Serve hot in bowls topped with fresh berries and any additional toppings you prefer.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to three days. Reheat on the stove or in microwave, adding coconut milk or water if too thick.
