Ingredients
  

Onions

  • 4 large large yellow onions, peeled and sliced into ¼-inch rounds Use sweet or red onions for different flavors.

Seasonings

  • 1 tablespoon Olive oil, for drizzling Drizzle lightly over onions.
  • ½ teaspoon fresh thyme, chopped Feel free to adjust to taste.
  • To taste Salt and pepper

Cream Mixture

  • 1 cup heavy cream Can be replaced with half-and-half for a lighter version.
  • 2 teaspoons Dijon mustard Ensure it's gluten-free if necessary.

Cheese

  • ½ cup Asiago cheese, grated Can substitute with Parmesan or Gruyère.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Arrange the sliced onions in a baking dish.
  • Drizzle them lightly with olive oil and sprinkle with thyme, salt, and pepper.
  • In a bowl, mix the heavy cream and Dijon mustard until smooth.
  • Pour the cream mixture over the onions, ensuring they are well coated.
  • Sprinkle the grated Asiago cheese evenly over the top.

Baking

  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the onions are tender and the cheese is golden and bubbly.
  • Let it cool slightly before serving.

Notes

Serve hot as a side dish. Pairs well with roasted meats, grilled chicken, or salad. Can prepare a day ahead and refrigerate.
