  • 4 large large yellow onions, peeled and sliced into ¼-inch rounds
  • 1 tablespoon Olive oil, for drizzling
  • ½ teaspoon fresh thyme, chopped

  • 1 cup heavy cream
  • 2 teaspoons Dijon mustard
  • ½ cup Asiago cheese, grated

Preparation

  • Preheat your oven to 350°F (175°C).
  • Arrange the sliced onions in a baking dish. Drizzle with olive oil and season with salt, pepper, and chopped thyme.
  • In a bowl, mix the heavy cream and Dijon mustard until well combined. Pour this mixture over the onions.
  • Sprinkle the grated Asiago cheese on top of the onions.

Baking

  • Cover the baking dish with aluminum foil and bake for 30 minutes.
  • Then remove the foil and bake for another 15-20 minutes, or until the onions are tender and the cheese is golden and bubbly.

Serving

  • Let it cool slightly before serving.
  • Serve hot as a side dish. It pairs beautifully with roasted meats, baked chicken, or a simple green salad.
  • You can also sprinkle a little extra thyme on top for added flavor and presentation.

Notes

For a deeper flavor, you can sauté the onions in a pan with a bit of olive oil before baking. Experiment with cheeses like Parmesan or Gruyère for a unique taste. Adjust seasoning according to your taste; consider adding garlic or herbs for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the oven until warmed through.
