Ingredients
  

For the Salsa

  • 1 cup canned yellow corn (strained and rinsed)
  • 1 cup black beans (strained and rinsed)
  • 1/2 large red onion (finely diced)
  • 1 jalapeño (finely diced) with or without seeds
  • 1/2 cup finely diced tomatoes
  • 1/2 cup chopped cilantro
  • 2 tablespoons minced garlic
  • 1 lime (freshly squeezed juice)
  • Salt (to taste)

For the Creamy Sauce

  • 1/3 cup light sour cream
  • 2/3 cup Greek yogurt
  • 3 tablespoons Tabasco Chipotle pepper sauce
  • 1.5 tablespoons Chamoy sauce
  • 1.5 tablespoons honey
  • 1 teaspoon garlic powder

Main Ingredients

  • 1.5 pounds preferred steak cut (top sirloin recommended)
  • 2-3 tablespoons neutral oil
  • Southwest-style seasoning (to taste)
  • Cooked jasmine rice (or your preferred bed of rice)
  • Avocado slices
  • Chopped cilantro

Instructions
 

Salsa Preparation

  • In a medium bowl, combine all the salsa ingredients, including salt. Keep this mixture in the fridge until assembly.

Creamy Sauce Preparation

  • In a separate small bowl, mix all the ingredients of the sweet & creamy Chipotle sauce. Adjust the seasoning if needed and refrigerate.

Steak Preparation

  • Prepare the steak by cutting it into cubes and tossing them with some neutral oil and Southwest-style seasoning.
  • Cook the steak cubes in a greased skillet over medium-high heat for 6 to 8 minutes or until you reach your preferred beef doneness. Stir occasionally.

Assembly

  • Assemble the bowls. Start with a bed of cooked jasmine rice, followed by generous servings of salsa and steak.
  • Top each bowl with a drizzle of the creamy sauce, avocado slices, and chopped cilantro.

Notes

Allow the steak to rest for a few minutes after cooking before cutting it into cubes to keep it juicy. Add more veggies like bell peppers or zucchini for extra nutrition and color. Feel free to adjust the spice level by adding more or less jalapeño.
