Main Ingredients

  • 2 cups fresh cranberries You can also use frozen cranberries, thawed and drained.
  • 1 cup sugar Adjust according to taste preference for sweetness.
  • 1 cup heavy cream Whipped until soft peaks form.
  • 1 teaspoon vanilla extract Enhances the flavor of the mousse.
  • 1 envelope unflavored gelatin Used to help the mousse set.
  • 1/4 cup cold water For dissolving the gelatin.

Preparation and Cooking

  • In a saucepan, combine cranberries and sugar. Cook over medium heat until the cranberries burst and the mixture thickens. Let it cool.
  • In a bowl, dissolve gelatin in cold water.
  • Add the gelatin to the cooled cranberry mixture.
  • Whip the heavy cream with the vanilla extract until soft peaks form.
  • Gently fold the whipped cream into the cranberry mixture.
  • Spoon the mixture into dessert cups and refrigerate until set, about 2 hours.

Notes

Serve in small dessert cups or bowls, garnished with fresh cranberries, a dollop of whipped cream, or a sprig of mint. Store covered in the refrigerator for up to three days. Enjoy chilled.
