Ingredients

Main Ingredients

  • 20 oz cheese tortellini Fresh or refrigerated varieties yield the best texture and taste.
  • 1 lb steak (sirloin or ribeye) Sirloin is leaner; ribeye is more tender.
  • 1 pinch salt
  • 1 pinch black pepper

Seasoning

  • 1 tsp garlic powder
  • 1 tsp smoked paprika

For Cooking

  • 2 tbsp olive oil Essential for searing the steak.
  • 4 tbsp butter Creates a creamy sauce base.
  • 5 cloves garlic, minced Adds aromatic richness.
  • 1 cup heavy cream Contributes a velvety smoothness.
  • 3/4 cup whole milk Balances the richness.
  • 1 1/4 cups parmesan, shredded or freshly grated Brings a savory flavor.

Garnishes and Optional Ingredients

  • 1 tbsp parsley, chopped Optional, brightens the dish.
  • 1 tsp red pepper flakes Optional, for a spicy kick.
  • 1 pinch cracked black pepper Optional garnish, elevates the flavor.

Instructions

Cooking the Tortellini

  • Begin by boiling water in a large pot. Add a pinch of salt and the cheese tortellini. Cook them according to the package instructions until they are al dente. Drain and set aside.

Preparing the Steak

  • Season the steak with salt, black pepper, garlic powder, and smoked paprika. Let it sit for a few minutes to absorb the flavors.

Searing the Steak

  • Heat olive oil in a large skillet over medium-high heat. Add the steak and cook for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove it from the skillet and let it rest.

Making the Creamhouse Sauce

  • In the same skillet, add butter and minced garlic. Sauté for about 1-2 minutes until fragrant. Then, pour in the heavy cream and whole milk, stirring constantly. Allow the mixture to simmer gently.
  • Stir in the parmesan cheese until it melts into the sauce. Mix well.

Combining Ingredients

  • Slice the rested steak into thin strips. Add the cooked tortellini and steak to the creamy sauce. Toss everything together until well coated.

Final Seasoning and Serving

  • Taste and adjust seasoning with more salt, pepper, or red pepper flakes, if desired.
  • Garnish with chopped parsley and cracked black pepper before serving.

Notes

Serve this dish hot and fresh from the skillet. A side of garlic bread and a simple green salad pairs nicely. For an elegant touch, sprinkle some extra parmesan cheese on top to enhance the flavor. To store leftovers, let the dish cool down to room temperature. Place it in an airtight container and refrigerate for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of milk to restore creaminess.
