Salad Ingredients

  • 2 cups shredded imitation crab Use fresh or frozen, thawed imitation crab.
  • 1 cup sweet corn, drained Canned or fresh corn can be used.
  • 1 cup diced cucumbers Peel if preferred.
  • 1 cup diced bell peppers Any color bell pepper can be used.
  • 1/2 cup chopped red onion Adjust the amount based on preference.

Dressing

  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 2 tablespoons lemon juice Freshly squeezed is preferred.
  • to taste Salt and pepper Adjust to personal preference.

Preparation

  • In a large bowl, combine the shredded imitation crab, sweet corn, cucumbers, bell peppers, and red onion.
  • In a separate bowl, mix together the mayonnaise and lemon juice until smooth.
  • Pour the dressing over the salad mixture and toss until everything is well combined.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be served on its own, on a bed of greens, or as a filling for sandwiches. Store in an airtight container in the refrigerator for up to three days.
