Cowboy Caviar Jalapeño Popper Cheese Log

Ingredients
  

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 oz finely chopped jalapeños
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (frozen or canned, thawed and dried)
  • 0.5 cup diced red onion
  • 0.25 cup chopped fresh cilantro
  • 2 tbsp freshly squeezed lime juice
  • Tortilla chips, crushed (for coating)
  • Plastic wrap (for shaping log)

Instructions
 

  • In a large mixing bowl, combine softened cream cheese and shredded cheddar cheese. Mash and mix until smooth.
  • Fold in chopped jalapeños, black beans, corn, diced red onion, cilantro, and lime juice. Mix until well combined.
  • Transfer the mixture into a flat, rectangular container (lined with plastic wrap). Pat it down into an even layer and smooth the top.
  • Cover with additional plastic wrap and refrigerate for 2 hours (or until firm).
  • Once firm, flip the log onto a cutting board. Remove the plastic wrap and gently press crushed tortilla chips onto all sides of the log to coat.
  • Slice into 12 even pieces and serve on a platter or buffet.

Notes

Wear gloves when handling jalapeños to avoid skin irritation.
For a milder flavor, remove jalapeño seeds and membranes.
Chill the log for at least 5 hours in the refrigerator to achieve optimal firmness.
Store leftover slices in an airtight container in the refrigerator for up to 3 days.
