Ingredients
  

Meat and Vegetables

  • 1 lb ground beef
  • 1 can corn (drained)
  • 1 can green beans (drained)
  • 1 can diced tomatoes
  • 1 onion chopped onion
  • 2 cloves garlic (minced)

Toppings

  • 1 cup shredded cheddar cheese Can substitute with Monterey Jack or pepper jack.
  • 1 package tater tots
  • to taste Salt and pepper
  • to taste paprika and Italian seasoning Optional for additional flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet and cook until softened.
  • Stir in the corn, green beans, diced tomatoes, salt, pepper, and any optional seasonings you like.

Assembly and Baking

  • Transfer the beef mixture to a baking dish and layer the tater tots on top.
  • Bake in the preheated oven for 30 minutes.
  • Remove from the oven, sprinkle cheese on top, and return to the oven for an additional 10 minutes, until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes

Serve hot, pairs well with a green salad or warm bread. Offer hot sauce or additional seasonings for extra spice. Leftovers can be stored in the fridge for up to 3 days or frozen for longer storage. Reheat in oven or microwave when ready to serve.
