  • 1 lb fresh green beans (trimmed)
  • 4 cups baby potatoes (diced)
  • 6 slices bacon (chopped)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and pepper to taste

Cooking

  • Cook the chopped bacon in a skillet until crispy. Set aside and reserve the drippings in the skillet.
  • Sauté the diced onion in the bacon drippings until soft, then add the minced garlic and stir for about a minute.
  • Add the diced potatoes to the skillet and brown them for 5–7 minutes, stirring occasionally.
  • Mix in the trimmed green beans, ranch seasoning, dried thyme, dried rosemary, and chicken broth.
  • Cover the skillet and let it simmer for 15–20 minutes, or until the vegetables are tender.
  • Stir in the crispy bacon, season with salt and pepper to taste, and serve warm.

Notes

For extra texture, you can add sliced almonds or walnuts before serving. If you like it spicy, consider adding red pepper flakes for a kick. Use fresh herbs if you have them on hand for more flavor. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
