Country Fried Chicken

Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts (or thighs, if preferred)
  • 1 cup buttermilk Homemade version: mix 1 cup of milk with 1 tablespoon of vinegar or lemon juice.
  • 2 large eggs, beaten

For the Breading

  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper Adjust for desired spice level.
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Vegetable oil for frying

For the Gravy

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper For gravy.
  • Salt to taste (for gravy)

Instructions
 

Preparation

  • In a large bowl, combine buttermilk and beaten eggs. Add chicken breasts and marinate for at least 30 minutes.
  • In another bowl, mix flour, paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Remove chicken from the buttermilk mixture, allowing excess to drip off, then dredge in the flour mixture, coating well.
  • Fry chicken in hot oil until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Gravy

  • For the gravy, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes.
  • Gradually add chicken broth and milk, whisking continuously until thickened. Stir in thyme, black pepper, and salt to taste.

Serving

  • Serve the fried chicken hot with gravy on top.

Notes

Marinate the chicken for longer if you can, even overnight, for a more tender and flavorful result. Make sure your oil is hot enough before frying; use a thermometer to check that it’s around 350°F (175°C). Keep the fried chicken warm in a low oven while you cook the rest, ensuring everything is hot when serving.
