  • 1 cup cottage cheese Use full-fat for a creamier texture.
  • 1/3 cup natural peanut butter For best flavor, use natural peanut butter.
  • 1 to 2 tablespoons maple syrup or honey Adjust sweetness to taste.
  • 1/2 teaspoon vanilla extract For added flavor.
  • 1 to 2 tablespoons milk (or dairy-free alternative) Use to adjust mousse consistency.

Instructions
 

Preparation

  • Add the cottage cheese to a high-speed blender or food processor. Blend until completely smooth.
  • Add the peanut butter, maple syrup or honey, and vanilla extract. Blend again until fully combined.
  • Gradually add the milk and blend until you reach your desired mousse consistency.
  • For a firmer mousse, chill in the refrigerator for 30 minutes.
  • Spoon the mousse into serving bowls and top with chocolate drizzle and peanuts if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. The mousse maintains its texture well if toppings are not added.
