Ingredients
  

For the toast

  • 2 slices slices bread (sourdough, whole wheat, or your favorite) Choose sturdy bread that can hold the topping.

For the avocado mix

  • ½ avocado ripe avocado The avocado should give a little when squeezed.
  • ½ cup cottage cheese Full-fat cottage cheese is creamiest.
  • 1 egg hard-boiled egg Cook according to step 1.
  • teaspoon paprika Adds warmth.
  • teaspoon salt
  • teaspoon black pepper
  • 1 teaspoon Dijon mustard Adds depth.
  • 1 tablespoon sliced green onion Optional for added flavor.
  • 1 tablespoon hemp seeds For extra crunch.
  • to taste Everything-but-the-bagel seasoning For garnish.

Instructions
 

Preparation of Egg

  • Place your egg in a small pot and cover it with cold water by about an inch. Bring to a rolling boil, cover, and remove from heat. Let sit for 9-12 minutes. Transfer to ice water, peel, and set aside.

Toast Bread

  • Toast the bread slices until golden and lightly crisp.

Make the Mixture

  • In a bowl, mash the avocado, cottage cheese, and the chopped hard-boiled egg together. Leave it chunky or smooth based on preference.
  • Stir in paprika, salt, black pepper, Dijon mustard, and green onion. Taste and adjust seasonings.

Assemble Toast

  • Spread the avocado mixture on the toasted bread. Sprinkle with seasoning and hemp seeds.

Serve

  • Serve immediately while fresh.

Notes

Best served fresh. Store leftover mixture in an airtight container in the fridge for up to a day. Toast the bread fresh before serving.
