Preparation

  • Preheat your air fryer to 400°F (200°C).
  • Cut the corn into riblets by slicing the kernels off each ear in quarters.
  • In a bowl, mix olive oil, chili powder, garlic powder, paprika, and salt.
  • Toss the corn riblets in the spice mixture until well coated.

Cooking

  • Place the corn riblets in a single layer in the air fryer basket.
  • Air fry for 10-12 minutes, shaking the basket halfway through.
  • Once crispy and golden, remove from the air fryer.

Serving

  • Top with Cotija cheese, chopped cilantro, and a squeeze of lime before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the air fryer or oven to restore crispiness. Adjust seasoning to taste, and customize toppings as desired.
