  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup spinach, chopped
  • 1 teaspoon chili powder Add more for extra spice.
  • 1 teaspoon cumin Enhances the flavor.
  • Salt and pepper to taste

  • Dipping sauce (optional) Salsa, guacamole, or ranch dressing.

Preparation

  • In a bowl, combine the shredded chicken, black beans, corn, cheese, spinach, chili powder, cumin, salt, and pepper. Mix well.
  • Lay an eggroll wrapper on a clean surface, place a spoonful of the filling in the center, and fold the wrapper according to package instructions.

Cooking

  • Heat oil in a deep frying pan over medium heat.
  • Fry the eggrolls until golden brown and crispy, about 3-4 minutes per side.
  • Remove from the oil and drain on paper towels.

Notes

Make sure the oil is hot enough before frying to ensure a crispy texture. Don’t overfill the wrappers to prevent bursting. For a healthier option, you can bake the eggrolls instead of frying them.
